Quick Bacon & Veggie Pasta Carbonara

Since I made this for my meal prep for both myself and my other half it makes 12 servings

INGREDIENTS:

  • 6 slices bacon

  • 2 packages spaghetti, 2 lb total

  • 1 cup frozen peas

  • ½ bunch asparagus, cut into 1/2-inch pieces

  • ¼ cup fresh basil, thinly sliced

  • 10 eggs

  • ¼ cup whole milk

  • 1 cup grated parmesan

  • salt

  • black pepper

Instructions

  1. Cut bacon into little pieces. Heat bacon in a skillet over medium heat. Cook until crisp, about 2-3 minutes per side. At the same time, add asparagus to the pan with reserved bacon fat and cook until tender, about 4-5 minutes. Add basil and stir to combine. Transfer out of pan and set aside.

  2. Meanwhile, bring a pot of salted water to a boil. Add spaghetti and cook according to package directions, or until al dente, stirring occasionally. Add peas in the last minute of cooking. Reserve 1 cup pasta water, then drain spaghetti and peas and set aside.

  3. Whisk eggs, milk, and parmesan in a bowl. Slowly add 1 cup pasta water, stirring to combine.

  4. Toss spaghetti, peas, and bacon in a bowl. Add egg mixture and stir constantly until well-coated. (If spaghetti isn’t warm enough, you can do this in a pan over low heat, but work quickly to prevent eggs from scrambling).

  5. To serve, add asparagus and season to taste with salt and pepper.
